Roasted red peppers dip

Ingredients for 4 servings:

  • 4 roasted red peppers
  • 100g goat cheese
  • 2 garlic cloves
  • 1 tablespoon tomato concentrate
  • ½ bunch of dill
  • ½ bunch of parsley
  • 50ml olive oil
  • salt to taste

Preparation:

  1. Grind briefly the peppers, the garlic, the tomato concentrate, the dill and the parsley in a blender.
  2. Add the cheese, the olive oil and the salt.
  3. Grind again until you have a homogenic paste. Serve with toast.

Tip: This dip can be stored in a refrigerator for up to 5 days.
