Quick Lyutenitsa with honey (Modern quick lyutenitsa)

Ingredients for 5-6 jars 300g each:

  • 3,5kg red long fleshy pepper
  • 400g tomato paste
  • 1 garlic bulb
  • 80g honey
  • 20g salt
  • 180ml cooking oil


  1. Wash the peppers and remove the stalks and seeds. Roast and peel the peppers.
  2. After that, grind the peppers in a meat mincer. Peel and chop the garlic.
  3. Mix all ingredients, besides the cooking oil, in a suitable container. Heat the oil until it starts to sizzle (this is done to prevent the oil from turning rancid) and add it to the other ingredients in a thin stream while stirring constantly. Put the lyutenitsa in the jars, close the jars tightly and boil them for 15-20 minutes as the water should be about 2 cm above the jars.
