Mititei, Romanian grilled minced meat rolls with lyutenitsa

Preparation time: 40 minutes + 1 night for the minced meat

Ingredients for 20 minced-meat rolls:

  • 500g pork minced meat
  • 500g veal minced meat
  • 1 garlic clove
  • 1,5 teaspoon of salt
  • 1 teaspoon of baking soda
  • ¼ teaspoon of cumin
  • 1 teaspoon of dry basil
  • ¼ teaspoon of ground black pepper
  • 50ml veal bouillon
  • lyutenitsa for a side-dish


  1. Chop the garlic clove, add some of the salt and press it using a knife until it becomes a paste. Mix together the garlic paste, the baking soda, the cumin, the basil, the ground black pepper, the rest of the salt and the veal bouillon in a bowl.
  2. Add the minced meat and mix all ingredients together using your hands. Cover the bowl with foil and leave it in the fridge for one night.
  3. After that mix again and make minced-meat rolls. Put some of the mixture on a foil and shape it as a long sausage. Use the foil to tighten it up to give it a nice tight shape. After that cut it into pieces and shape the rolls with wet hands.
  4. Cook the minced-meat rolls on each side on a grill or a grill pan. Serve with lyutenitsa.
